My kids have MP3s. I can't tell you the exact differences. I'm sure there's a lot of brand name you are paying for with an iPod and there are probably some functions that are not on my kids MP3s that are on an iPod.
I can tell you that DH regularly downloads songs from iTunes to put on their MP3s.
I had an ipod and I didn't like the way it functioned. I didn't think it was very user friendly. I have a Sansa MP3 player that I LOVE. I gave the ipod to my dad and told him to enjoy. I also put songs from iTunes onto my MP3 player.
I have a Sansa too and I love it. I love that it has a playlist and a radio tuner, unlike hubby's Ipon shuffle. They are almost exactly the same size and both clip on, but I actually like mine better.
You have to burn CDs with the Itunes songs and then rip to mp3s. There also may be some software programs that will do it directly, but Apple does not provide it.
