Mother's Day Weekend - How busy?

My daughter and I will be arriving in Orlando on the night of May 5th. We would like to hit all 4 parks, even if just for a short time. We plan to spend all day Friday 5/6 in the MK. I had thought that on Saturday 5/7 we would spend the morning and early afternoon in AK and the late afternoon and evening in EPCOT. We then have a reservation for the Princess Tea Party on Sunday morning and I was planning to finish the day at MGM. If we put off EPCOT until late in the day on Saturday do you think we will still be able to ride Test Track and Soarin, the 2 main rides we would like to hit? Do you think Fast Passes will still be available? I know this year is harder to predict due to the 50th but I'm looking for educated opinions. How busy would you think this particular weekend will be? Thanks!
 
I've been there on Mother's Day weekend and it wasn't more crowded than a regular weekend. But it's the first weekend of the celebration so it might be more crowded. The wait time on Test Track fastpasses when I was there in early March in the afternoon on a Sunday was about 3 hours, I think standby was about 50 minutes. How old is your daughter? Would you consider single rider?
