I am taking my Mom to Disney in October. She is very excited about the trip and so am I. Because it is a gift to her, I have made all the arrangements but made sure to ask her imput. For instance I sent her a link with menus and asked her to pick out a few that she liked.
For Mother's Day I made her a huge binder detailing our days, with pictures from the parks, the resort (CSR) and restaurants. It reads like a story book. Each day has a loose itinerary with pictures of a few rides, menus, and shows. It the back there are blank pages for her notes.

My Mom has never been a particularly demonstrative person but she absolutely GUSHED when she got this. I was so pleased! I made my MOM happy!
 
Thats was really nice. If it has more room in it-you can always add to it and scrapbook pics and souvenirs (napkins, toothpics, park maps-little stuff) from your upcoming trip.
