What are some under the radar things to do at WDW that maybe people tend to forget about or overlook? My top 5
1-flag retreat at MK
2-jalapeno pretzel at AK
3-pot roast mac n cheese from Friars Nook
4-Living with the land
5-Food Trucks at Disney Springs

Okay, looking at the few things listed above, i'm really annoyed that I didn't get the Jalapeno pretzel or the grey goose slushie when I was there in June since I don't plan to return for quite a while.
Coin press machines really underated and agree with above, Maya Grill; fantastic food.

Stitch's Great Escape (I think it is fun and quite entertaining)
Carousel of Progress
Maharajah Jungle Trek (Tigers are just cool)
The Morocco section of EPCOT (it's a maze back there) specially the Museum

There are lots of little hidey-holes around the parks that are nice places to get away. The area to the right of France being one of the best.

The play areas at the end of the Epcot rides (Spaceship Earth, Test Track, Mission Space, Figment) - my boys loved all of them, even if they didn't go on the ride first.

Yes! Epcot has the most play areas by far for our boys. I wish people would realize Epcot is excellent for little kids.

Grey Goose Slushie, Epcot

This is my jam. Le Grand is even better.

Coronado Springs, in general (food/pool/atmosphere are all amazing)
CoP
Pick a Pearl in Japan Pavilion
Sanaa - the family still talks about it and how on point *everything* was

Riverboat ride around Tom Sawyer Island. It's so relaxing and fun to see some stuff that you don't see walking around the park. If you partner this with a trip around Magic Kingdom on the railroad in the early to mid afternoon, you have a good hour of relaxation while ride lines are extra long. And if you add in Peoplemover and Carousel of Progress, things are really relaxed!

Grabbing a cupcake and enjoying it at a table outside ABC Commissary or Muppets Courtyard. The old television theme songs or Muppets music brings back nice memories and it's nice to get out of the sun and people watch for a bit. Plus, the cupcakes are delicious.

Watching the fountain dance to the music at Epcot.

Just walking through Magic Kingdom... soaking it in, people watching and not having to rush to a meal or a ride
Walking the Boardwalk in the early morning or late evening
Friar's Nook in Magic Kingdom
The Lemon Drop martini at the Tambu Lounge in the Poly
Appreciating being 'under the bubble' of Disney World as an escape from the 'real world'

Sitting out at Boardwalk Bakery with a big sandwich and cupcake.

It doesn't look like much from the outside and I've always thought that they should do more with the boardwalk. Maybe it's because we travel to Disney in December and we (usually) get warm weather, but nothing beats sitting outside while everyone we know is freezing up in NY.

I'd also say the simple act of relaxing in Disney is underrated. People, we included, think that you need to be running to the parks every second. It's nice to go to the pool or take the afternoon off and relax.

I'd also say going to the different lobbies and resort hopping is underrated - mostly to non-Disney fans. People hear that we spent an afternoon going hotel to hotel and they look at us as though we're crazy... but Disney hotels - especially during the holidays, have some of the best decor.

my top 5:
1. - Magical Express (a shuttle at no charge, I think it is an awesome service)
2. - Blizzard Beach
3. - Karamel Küche
4. - The Wave
5. - Dinosaur
