I make a super easy lemon chicken. Just use very thin chicken cutlets, coat in flour that you season with salt, pepper, garlic powder and parsley. Then dip in beaten egg. Saute them in melted butter until browned. Then place them in a baking dish and pour a can of chicken broth over them. Squeeze 2-3 lemons into the liquid and place lemon slices on each piece of chicken. Cook for about 30 minutes. I make roasted broccoli and either rice or mashed potatoes with it.
