Modified Disney Recipes....who's done it?

Looking to see what variations have been done on Disney recipes to reduce the fat/sugar/calorie content.

Right now, I'm getting ready for my 3rd batch of that liquid gold that Boma called Ginger Carrot Soup.

Batch 1 was the recipe as is. Sheer Bliss! But oh, the cream! (recipe for 8 servings has 2 cups of heavy cream + 1 cup milk!)

Batch 2 I used WW flour instead of White flour in the roux, 1 c yogourt + 1 c skim milk + 1 c cream (think those were the proportions) instead of 2 c heavy cream + 1 milk...... Ugh! Whole wheat flour was a mistake! Couldn't move past that taste. Didn't finish that pot of soup!

Batch 3 Was planning on leaving the white flour in the roux, but using the yogourt/skim milk/cream as batch 2, but just realized I have no yogurt. hmm. Also going to use just 1 T of Sugar (I figure 2 oz is about 3-4 T), but don't want to totally eliminate it yet.
 
Ginger Carrot Soup (original recipe from ?Dis or Allears?. my changes in RED)
Boma: Animal Kingdom Lodge
Yield: 8 servings

Roux (2 ounces butter and 2 ounces flour) (? do they mean by volume or by weight? let's assume volume: so 1/4 cup of each).....(don't use whole wheat, you'll be soorrry!... maybe just half both for a thinner soup? I'll try that Batch 3)
Method:
To make the roux:
Melt the butter in a small sauce pot
Slowly add the flour to make a paste.
Cook until incorporated.
Remove from heat and set aside.

Ingredients:
1 pound carrots, chunky cut ....6-8
2 cups water
2 cups heavy cream. . . . . ... that's a lot of milk fat..(Batch 1 I did use 1 c 32% mf & 1 c 18% mf cream)... Batch 3 will try 1c yogourt +1c 10%mf
1 cup milk. . . . . . . .(Used skim milk)
2 ounces American cheese, sliced or shredded ie, about 3 slices kraft singles
. . . . (I used low fat kraft singles). Batch 4 I'll try it with out the cheese. That will reduce the sodium as well
½ ounce ground ginger (fresh ONLY). . . .(I used about 2 T shaved & chopped fresh ginger)
2 ounces sugar, adjust as needed (? do they mean by volume or by weight? let's assume volume: so 1/4 cup) .....(I used 1/2 of that: 2 T)

Soup
In pot, cook carrots in water, sugar, and ginger.
Let simmer until carrots are soft.
Puree til smooth, using a beurre mixer (ie, hand blender.. or if you're reallyyy careful, dump in in the food processor, but go slow, watch out for steamy splashes).
Add heavy cream, milk, and roux.
Cook until soup is hot and slightly thick.
Add American cheese and let simmer until cheese melts.
Adjust seasoning. . . . . . (I added fresh ground pepper, but kept the salt shaker away)

I'll update the taste tomorrow.. will wait til I have yogourt for batch 3.
 
I love this idea! i'll add your final recipe to the recipe collection on the Healthy Eating sub-board; but i think we may get more response of additional modified recipes on the main WISH board.
