Mobile ordering newbie

So I’m a little anxious about the whole thing. I use gift cards so I don’t pay exchange fees on my credit card. When I order, I’ve been assured my DVC discount is applied but I have a couple of questions

will I be charged on my linked credit card when I order or can I pay with a gift card when I pick up?

do I have to use mobile ordering only or is there a walk up option?

You have to pay at the time of the mobile order, but you can add a Disney gift card as a payment option when you place the order.

They still have walk up ordering, it doesn’t have to be a mobile order. However, I have heard a few times that Pym’s Test Kitchen was mobile order only.
 
Most places still have walk up ordering, but they are really pushing mobile ordering. Mobile ordering can still take a while, so keep that in mind. For example, I just wanted a cold brew coffee from Hungry Bear and it was an hour until the first mobile order time. I ordered and then it said to come back within a 30 minute window. When the window opens, you have to click "I'm here" and then they will prepare your order. Now I know to click, "I'm here" when I am heading over there instead of after I get there.
 
You can pick your form of payment when you checkout using Mobile Ordering and using a giftcard is an option.
Most spots have walk-up options but some of the lines were horrendously long for walk up (this was last week) and some locations are mobile order only (the Cozy Cones, for example, were only mobile order last week.
Some of the mobile order spots can be 30-60 minutes away but we just tended to decide an hour in advance what we wanted to eat and build the order/reserve the time. A couple of times we had to move the time back and that was super easy.

I love mobile ordering and will use it every time. It was something we were actively using before the pandemic and loved it even then, too.

It's very hit and miss though. We ordered from Ronto Roasters and when my window opened up I clicked "Im here" and my food was already sitting on the counter when I walked up 20 seconds later. I also ordered 2 of the juice drinks and same thing, almost immediately after clicking "im here" the drinks were on the counter to be picked up. Two days later I ordered a couple drinks from Smoke Jumpers, I waited 30 min after clicking "Im here" and never got the notification my order was ready. I spoke to the CM at the door and he pushed my order through to be picked up. I then waited in another line for 45 minutes with all the other mobile orders to be picked up, two lines about 15 people deep each side, it was extremely frustrating wasting over an hour just to get 2 non-alcoholic drinks. Had I known it would have been that long they most definitely would have had alcohol.
