I'm not sure where the "perfect" spot to watch is but I'm guessing thats crowded. Is there a not so perfect spot that's still pretty good but not overly crowded? Thanks.

I have found the Rose Garden, off to the right of the castle (as you face it from Main Street) a nice spot. You do not have the perspective of the Castle in front of the fireworks, but you sure can see both the Castle and the fireworks just great. And there are even some benches to sit on if you are there early.
