MK And Epcot Plans.

I plan way too early just the way my brain works. Wife and I are doing a no kid trip in October for our anniversary. We have a 3 day park hopper and only plan on Epcot and MK. The only way we see ourselves going to HS is if the new Mickey ride is open and will only go to AK if we are lucky to snag a FOP FP.

So below are my two options which one would you do?

Option 1

Wednesday hit up Epcot for Food and Wine go over to MK around 6 for the only HEA on our trip.

Thursday MK until 6 PM then an ADR for Anniversary Dinner

Friday MK until 6 then park hop to finish out our trip.

Option 2

Wednesday all day MK including HEA.

Thursday All Day Epcot Anniversary dinner in the park.

Friday MK until 6 then play it by ear.
 
Much as I like Park Hopping on longer trips, I really don't like it on shorter trips. Too much time walking to transportation, waiting, bag check, etc. It's only my preference, but I like your option #2.
 
I actually like hopping since we often tour commando style and it gives a short break, but I can also see why someone would avoid it on a short trip.
I would say if you're a rope dropper and start really early then you might consider hopping (option 1), but if you arrive at the parks a bit later then option 2 looks better. Either way it's nice to do an occasional adults only trip :)
