Wow -- it's always eye-opening to me to see the range of experiences and opinions! Our DS, 8, is also very interested in Japanese and Asian culture. We ate at Teppanyaki in December and are returning this December -- it was one of our favorite meals of the trip. It's true -- our chef was less "entertaining" than the chef at the next table, but we didn't feel that it was enough of an issue to put a damper on our enjoyment of the experience, and the food was outstanding (in our opinions). Regardless of how authentic it is, or not, I would reward your child's interest and curiosity by eating there, judging for yourselves, and perhaps seeking out other Japanese restaurants in your area (if that's possible) or on future travels....
