Mini mealoaf recipe please!

I can't make a meat loaf to save my life. DH wants me to try and make mini meatloaf that you put in muffin pans?? Could someone please share as I am clueless:rolleyes1

I would think that the only difference between a large & the muffin-sized ones would be cooking time.

I never used to make meatloaf - because it never tasted right to me. I finally figured out that I needed to add bread crumbs, not oatmeal like my Mom, and that helped a lot! But after discovering Boma at AKL I learned the value of a variety of different spices and started adding them to my cooking here at home. I'm not talking spice-Y...I'm talking spice-D. Flavor, not heat. So after using their flank steak marinade here (and loving it!!) I now use many of the same things in my burgers & meatloaf. Here's my recipe:

Meatloaf
1 lb ground beef (I use 90% lean)
1 egg, beaten
¼ c? ketchup or BBQ sauce
1 - 2 Tbl A-1® sauce
1 Tbl? Parmesan cheese
2 - 3 tsp? Worcestershire sauce
several drops, maybe 1/8 tsp Liquid Smoke®
½ tsp cardamom
½ tsp coriander
¼ tsp ginger (dry, ground)
1 tsp garlic powder
bread crumbs

Mix everything together except bread crumbs until evenly distributed. Add bread crumbs until you can make a loaf out of it without having it stick to your hands. I'm guessing at least ¼ cup. I usually have to add several times until it "looks right" as my grandmother would say.

The ingredients with the "?" behind them are things I forgot to actually measure when I was writing this down for someone. (I don't usually measure when I cook.) Because I weigh & measure my servings (I'm diabetic) I'm pretty good at judging measurements though.

BTW - I found that you can use the crockpot to cook the meatloaf and it's really good! I'd only use extremely lean meat though (nothing less than 90% lean) - since the meatloaf will soak up the fat instead of letting it pool around it.

I don't make mini loaves because my family loves BBQ meatloaf and need the leftovers for sandwiches. I've also been know to break up the leftovers and throw them into spaghetti sauce for a different taste. Here is my recipe if you want to give it a try, I cook it in the microwave, but you can cook it in the oven too.


BBQ Meatloaf

Makes 6 servings


1 1/2 lbs lean ground beef
1 lb ground turkey breast
1/2 cup chopped onion
1 clove minced garlic
1 cup fresh breadcrumbs
1 egg
1/4 teaspoon salt
1 teaspoon ground black pepper
1/2 cup bbq sauce, divided

Mix first eight ingredients in a large bowl. Add 1/4 cup of BBQ sauce. Shape into loaf. Placed in a microwave loaf pan that has been sprayed with cooking spray, cover.
Micro on 50% for 15 minutes. Pour 1/4 cup BBQ Sauce on top of loaf; carefully spread to cover. Replace cover and microwave on 50% for 15 minutes or until meat thermometer reads 140 degrees.
Let rest for 10 minutes.
 
ive made meatloaf patties before...jsut mix the meat and seasonings up like a normal meatloaf.....then form burger patties out of it.....you can either do them in the skillet or pop in the oven.....then top with a bit of ketchup (or tomato paste..your choice) and broil until they are nice and crusty on the outside :)

i suck at meatloaf too.....so this was my solution :rotfl:
 
The secret to a good meatloaf is to not mix it too much. Just like hamburgers and meatballs, it will get tough and dry if you do. Also, make sure you pack it tight to get the air out and to let it sit for about 10 minutes after cooking before you try to slice it, that way it won't fall apart.

My mom used to pour tomato sauce over a meatloaf and then top it with sliced onions and green peppers before cooking, it was th best! My family won't eat it that way so I haven't had it like that in ages.
 
Piratesmate, that recipe sounds delicious. I will have to try it.

I never had much luck with meatloaf in the past, either. I finally found one that everyone in the family agreed on -- and it was kind of a cheating way to do it. ;) I use the McCormick meatloaf seasoning packet and the instructions on it. :blush:

Now I use half ground turkey breast and half lean ground beef to make it a little healthier and we really can't tell the difference. (I also make mashed potatoes to go with it with half cauliflower and half potatoes.)
 
Disneyaholic - It's not cheating if that's the blend of spices you like! I use all kinds of shortcuts. That one doesn't work for me because we don't use much salt and those packet mixes tend to use a lot of salt.

I used to hate to make meatloaf. Following the way my mother made it, it tasted too much like hamburger as dumb as that sounds. I love the flavors in this recipe.

Years ago we used only ground turkey - no beef at all. But when I was pregnant the 1st time I had a serious problem with all kinds of smells. (Poor DH couldn't even kiss me without brushing his teeth first. :rolleyes: ) Ground turkey was guaranteed to make me ill. It didn't matter if it was cooked or raw. After packing up the stuff for the freezer, I could smell it on my hands for days - no matter how many times I washed my hands. I haven't been able to face it since. :confused3 We don't have beef often, so I don't feel too bad about it - plus we only use 90% lean or higher.

I keep thinking I should try the cauliflower in mashed potatoes, but I cheat & buy the Ore-Ida frozen ones. :lmao:
 
I believe this recipe is from kraft foods. It really is simple and taste good.

Meatloaf Minis
1 lb extra lean ground beef
1 pkg (6oz) Stove Top Stuffing Mix
1 cup water
3/4 cup Salsa 3
/4 cup Shredded Cheddar Chs
2 tsp chili powder
PREHEAT oven to 375 degrees. Mix meat, stuffing mix, water, and 2 tsp chili powder until well
blended. Press evenly into 12 medium muffin cups sprayed with cooking spray; make an indentation
in center of each with back of a spoon.
SPOON in salsa evenly on top of each indentation on meatloaves. Bake 30 min or until meatloaves are cooked
through (160 degrees) Top evenly with cheese. Continue baking 5 min or u ntil cheese is melted. Let stand
10 min before serving. Makes 6 servings, 2 meatloaves a piece.
 
Here's one using ground turkey. I tend to double or triple it so we have lots of leftovers-- its one of my DH's favorites!!!


Cooking spray
1/2 cup chopped onion
3 tablespoons dry breadcrumbs
1 tablespoon chopped fresh parsley
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon freshly ground black pepper
8 ounces ground turkey breast
1 large egg white
3 tablespoons ketchup, divided
1/4 teaspoon hot pepper sauce (such as Tabasco)

Preheat oven to 350°.
Heat a small skillet over medium-high heat. Coat pan with cooking spray. Add onion to pan; sauté 5 minutes or until lightly browned. Remove from heat; cool slightly.

Combine onion, breadcrumbs, and next 7 ingredients (through egg white) in a large bowl. Stir in 2 tablespoons ketchup. Spoon about 1/2 cup meat mixture into each of 3 muffin cups coated with cooking spray; place muffin tin on a baking sheet. Combine remaining 1 tablespoon ketchup and hot pepper sauce in a small bowl. Brush ketchup mixture over meat loaf tops. Bake at 350° for 30 minutes or until a thermometer registers 165°.
 
I was going to suggest Rachael Ray's too, it looked so cute. When I make meatloaf I use the Hunts can of meatloaf sauce and follow the directions on the can. So easy and tasty too!
