Mid November planning help?

I am hoping for help on various topics. Travel dates ~ November 14-21, and trying to do most DL stuff the weekdays in the full week BEFORE Thanksgiving, such as 15th-18th, so hoping crowds won't be gigantic. I have GCH booked and waiting for confirmation on work travel to firm up. We are emphasizing holiday offerings not available the rest of the year, as well as a few other attractions/restaurants unique to Disneyland or having a different twist at DL (such as Fantasmic).

-May Fantasmic run during this time (The holiday celebration time starting Nov 11th) (DL calendar seems not helpful/not filled out for Nov yet)?

-If so, is best chance to get a Fantasmic dining package to check early in the morning (6 Pac or even earlier in case they drop early) and if that doesn't work set a dining alert, such as through ************?

-I have been booking dining each morning the last several mornings but have never seen a Fantasmic package available but also see some of the other threads (e.g., Blue Bayou) on difficulty in getting them so don't know if they have been made available or not. We'd actually prefer River Belle or Hungry Bear versus Blue Bayou.

-Any sense of whether WOC, fireworks, and Fantasmic would run every night in this time period? It is the full week BEFORE Thanksgiving (such as Wed-Thurs night, Nov 16th - 17th) so not sure how the crowds will be and if Disney will think worth running? I am also waiting to see if DL will announce a holiday party, to see how that may affect things (we'd likely not do it, not being night owls anyway, and coming from the east coast)

-We'd like to see WOC but don't want to do a WOC dessert party (unfortunately, can't eat that much sugar). So I have booked lunch at Wine Trattoria for a few days at their earliest opening (which is 11:00 a.m. in contrast to the following link which says it is 12:30) and Storytellers at 5:00 and hoping I'd be able to tell the server we want the WOC package. Does that seem like might possibly work? I am following these instructions https://disneyland.disney.go.com/dining/disney-california-adventure/world-of-color-dining/ . I know we can also try the virtual queue at noon every day for WOC

-Any other holiday-specific planning that may be advisable? We will make sure to have tix/park reservations, park hoppers, plus buy Genie + and prioritize Haunted Mansion and Small world layovers, plan to line up for the parade, castle light up, Small World light up, and the fireworks (or let me know if there is some way to get a package/queue for any of those!), and partake in DCA festival of the holidays/feast.

-Not specific to the holidays, it seems like Carthay reservations are elusive and from reading some of the threads, those may have an irregular drop schedule so best chance is to keep checking early/often and set an alert?

-I've seen reference that Napa Rose having outdoor seating. Any knowledge on this such as if true and if so, how it is?

-I have some other decent dining booked as far out as is open right now (Nov 17th) so that is a plus
