Does anyone know if there is a published recipe for the Mickey waffles and/or if they are just a brand name mix? My friend got me the Delicious Disney Walt Disney World Food cookbook and I was hoping the recipe would be in there, but nope.

Supposedly it’s Carbon’s Golden Malted Waffle & Pancake mix. I haven’t tried it, but that’s the brand I’ve seen reported.

That's what I heard too (Carbon's Golden Malted Waffle) but I think it was the old version of the Mickey waffle, not the new one they started serving within the past 3-5 years.
 
Carbon loans free waffle makers to hotels and restaurants. The companies buy mix from Carbon. I have no reason to think Disney changed suppliers

I don’t either. I found articles from 2017 to 2022 all saying it was Carbon.
 
Krusteaz mix, available from places like COSTCO and Walmart, is similar.

Some people add ingredients such as vanilla and cinnamon

We liked the old version so that's good to know!
 
When I first got the Mickey waffle iron I bought a few bags of Carbons and they came out pretty good. One day I decided to bring a tray of Mickey waffles with berries and whipped cream to a work breakfast celebration so I didn’t want to use such an expensive batter since I had to make so many. I used the Krusteaz mix instead and they were still delicious so we just use that now.
