Who has the best Mexican food?
I looked at some of the menus but they seemed to be lacking.. Am I missing something?

It depends on the type of Mexican you're looking for.

If you're seeking the standard Tex-Mex/Americanized tacos, burritos, enchiladas, and the like, you're not really going to find them on property (not sure if La Tortuga at MK will be open for you, nor what it's menu is, so this may be an exception.)

Most of the Mexican, notably in, well, Mexico, is a bit more traditional authentic-based dishes and more upscale than the tacos and stuff.

As far as the "best", for me it was San Angel Inn last year. Ribeye Tacos and Sopa Azteca were very good. Of course, I wasn't that hungry and had a migraine starting up when I ate at Hacienda, so that certainly tainted my meal there. (I also ate at Cantina and it was very good, though the meat was a bit smoky for my taste).
 
We will be trying La Hacienda this Sept. La Cantina was very good! They have great nachos and tacos.
 

Even the tacos at the CS are not what most people would expect.

I got the chicken and it was good but not tex mex. Soft corn tortillas, meat and a little caso fresco not cheddar cheese and no lettuce.
 
We tried La Hacienda last year and we thought the food was pretty good. Our service on the other hand was extremely slow! If your looking for something quick La Cantina is a good option. We love the Nachos, there big enough for 2 people to share.
 
If you're looking for Tex-Mex (hardshell, ground beef tacos, chimichangas, burritos etc.) you are not going to find those at a Mexican sit-down restaurant at WDW.
 
La Hacienda's food is amazing; everything on the menu is great. I agree w/ WDWLodge about the service. Service is slow everytime we dine there.
 
The funny thing about Hacienda, I went there roughly a week after it opened. I was on DxDDP so I got app, entree, dessert.

Well, the entree came about 10 minutes after the app, and he came around again quite often during the meal. So the complete opposite of "slow" service. The upper managers also kept visiting and asking how everything was. Of course, there was about 6 parties in there, and I did have on a WDW polo shirt so they could have very well thought I was someone that I was not (and I was solo).

For those who visited within the first month or so, timing is something that had to be tuned quite finely and they simply hadn't gotten it down yet (same deal at Via Napoli that trip, though it was considerably better), so that's part of it. For those who traveled after it was established... there's no excuse for it then (in other words, if it was slow, it was truly their fault and not growing pains).

I'm looking forward to giving it a fair shake this year though, as last year's not-feeling-well really made it unfair to them.
