Mexican food recipes?

I just heat it up, and warm up tortillas I either make rice or there is a little Mexican store & a cafe that will sell rice and beans for $2 a pound.

Coscto also has really good tamales.
 
The way to good enchilidas is make sure to dip the tortillas in enchilada sauce or oil first to make them soft. they will hold up real good. I usually dip them in warm enchilada sauce and than put cheese inside.
 

Okay, AustinTink, I'm ready to cook now! Those recipes look great (as do a lot of others on this thread!) Since you've pretty much given us the whole meal, how do you make your beans?

That depends, do you want the all afternoon slow simmered charro beans or my quickie refried? Let's go with the refried. Take your whole pinto beans that have been cooked either by you, or in the can. Heat enough olive oil to lightly coat the bottom of the frying pan. Add a couple tablespoons of butter and melt. Once melted, add one large can (I think it's 16oz.) of pinto beans with juice. I like Bush's. Sprinkle in garlic powder. I eyeball this, just to your own taste. Bring it up to a bubble, then start mashing until smooth. Simmer a bit more on low to let the starches distribute. And voila! Home made refried beans that are sooo good!
 
Yummy! We tend to eat Mexican a lot because it's one thing we all like. I'm definately going to try some of these recipes but often, when I'm super short on time, I'll just open a can of chicken and make really fast enchiladas with whatever I can find in the cupboard - always have can of tomatoes with chilis, cheese, sour cream, black olives - fast, and usually no leftovers.
