Mexican Cornbread

I need a recipe for Mexican cornbread. The real cornbread, not sweet stuff.

My mom made great Mexican cornbread!!!!!!!!

I've looked through all her recipes and can't find one for this.......she cooked a lot from scratch......sadly something I cannot do. I need to measure things.

Here is what her recipe was like. Your basic cornbread with whole kernel corn (not creamed corn - DH thinks it's gross), onion, chopped hot pepper, and cheddar cheese. She would cook it in muffin pans - to make Mexican cornbread muffins.

Can anyone help??????
