Menu variations between ships and destinations?

I have only cruised DCL on the Fantasy. Although the two cruises were six years apart, the menu hadn't changed much.

I will be on the Magic in Europe in 2020.

How much do the menus vary between the different ships? Is one ship's menus better than the others in your opinion?

How much do the menus vary, if at all, when cruising Europe versus the Caribbean?

On a side note, I sure wish DCL didn't insist on so little spice and flavor. While the food is good, it really is bland. Even when the servers warn you of spicy or strong flavors, it is still child-level seasoning in all of the dishes.
 
The staples will be the same, like the black truffle pursiette, the escargots, the beef Wellington, etc. There are some exclusive choices in Rapunzel’s, like the charcuterie platter, but most choices are just rebranded items available on the other ships. In Europe, they usually add some local choices to the menus.

That's pretty much the way it is on most mass market cruise lines.
 
On our recent Alaska cruise there was a “regional favorites” section of each menu that had a few different options than the regular menu for the Wonder than my cruise 2 months before it. For example for one of the Animators Palate menus they had split pea soup in place of the baked potato soup.

I remember that day with my family three years ago. Somethings I wouldn’t normally try except I knew it would be wonderfully prepared through Disney. I would say most of the menus are currently tied to a Caribbean theme If they are.

Whereas for our family, that "child level" seasoning is too much and we know to avoid anything they warn is spicy or has strong flavors as it will be WAY too spicy for us.
