My kids and grandkids are going to be here. I need a simple menu for dinner when we come back from Cypress Gardens. My dd does not eat meat, fish or chicken. My dsil loves meat as does my older dd and dgs. I want to make a spinach pie which dd loves but I don't know what to make with it. I was thinking pork chops. Does anyone have a simple recipe? Any other suggestions. We would grill outside I guess and dd would have boca burgers (blech).

Would appreciate any and all suggestions.
 
I would make quiche. You can get it all ready ahead of time, and pop it in the oven when you get back. That way you can have some without meat, some with meat, veggies, etc. When we have quiche, we make a ham and cheese one, and a ham, cheese and spincah one.

I usually don't serve much in addition to the quiche, but if I was cooking for a crowd, I might add some fresh fruit or a green salad.

What about spinach manicotti or stuffed shells? You can make it ahead and warm it when you get home or do it in the crock pot and it will be ready when you walk in. If you want to add some italian sausage on the side you could but it can stand on its own as a meal.

Manicotti is on the menu for another night because it's something I can prepare in advance and use the soy crumbles for the meat.

But quiche is a wonderful idea - provided I can use the roll-out pie crusts.
 
Here's a good casserole dish for pork chops that won't take long.


Get the pork chops that are boneless. Make about 4-5 cups rice.

Mix with two cans cream of tomato soup.

Place pork chops in a pan. Cover with rice/soup mixture. Bake at 350 for about 45-50 minutes.

You'll please the veggie lovers with the spinach pie and the meat lovers with the pork chops.
 
This is an easy one--and filling too. You can add grilled chicken to satisfy the meat lovers.

1 bag American salad mix
1 bag cole slaw mix
slivered almonds
chopped scallions
1 small can rice noodles
your favorite sweet and sour salad dressing (I use Marzetti's)

You mix the two salad mixes, the almonds and scallions. Just before serving, toss with the salad dressing. Top with the rice noodles. This is similar to the oriental salad at Applebee's.

Veggie lasagna can be prepared ahead. I use spinach, garden veggies, asst layered cheeses rather than meat. This along with a side salad is tasty.

I use the frozen ones to make it even faster. Just put them in the fridge when you get home from the store so they're thawed before you get ready to use them.

I occasionally make muffin-sized quiches for my family. I cut circles of the roll-up crust and press it into muffin tins, then fill them with a variety of toppings. Even easier, is to do them fritatta style with no crust. Just spray Pam in each muffin tin, pour it half full of egg, then toss whatever fillings you want in each cup.

I serve these with fruit salad, usually. It's a great meal when we've been outside all day because you can prepare most of it ahead of time, and it's not too heavy.

Veggie kabobs are nice, but, honestly, they're not particularly filling.

I like the quiche idea; it would be easy to make and satisfy everyone. :)
