Okay, i've read all the way through now. since i have a son about your son's age, i can comment on what worked for us this past December. he was 2 years and 2 months on that trip and it was from Dec 10-20th. We did bring our stroller from home. but we did actually purchase a new one. We only had a 'travel stroller' which was the chicco cortina which i love, but it is way bulky and he was outgrowing it, so it was time for a more umbrella/compact type stroller anyhow for disney or elsewhere. We finally settled on the combi stroller at Babies R us. It folds so compact and VERY easily and has a huge strap on it so you can just throw it over your back. it doesn't have much of a basket below, but i bought an additional thing that goes on the handles to give more storage with zippers and pockets. plus i bought a cup holder. it comes with a cup holder for him, but no tray. It worked out perfect- easy to fold on and off for the tram (we drove our rental car and took the tram/monorails, so no buses)plus on the boats too from WL to MK. the tray wasn't an issue, he always held whatever he was eating anyhow. there is also this 'mommy hook' you can buy that you can hang on the stroller handles and then hang bags on too! anyway, bringing our own lightweight stroller was the best thing for us and he did use it a lot. he wasn't in the up and walking on his own in the parks quite yet. He would if we let him, but we preferred to keep him in the stroller when possible.
This trip, we will take the same stroller but i know he will walk a bit more this time. he is in that independent stage, where he wants to push the stroller, not ride in it! lol.
So sorry to hear about the frustration on DH's job and hte changing dates- so do you have dates now? i know that would drive me nuts.

MVMCP- while it is great and we have fun there (we've done it twice), we typically really go to see the christmas parade and just to get in extra park hours. to be honest, you aren't missing out on a ton. We don't spend time at the shows they do- we simply rides rides during the first parade, grab some of the free snacks and then catcht he second parade and fireworks (which are amazing). but it isn't a huge deal. we just like having one late night at the MK that is special, but it is pricey and not a huge deal if you miss it. you will still get to see so much else around the parks. Our DS LOVED the osborne lights and the snow falling there!
oh and the disney dooneys- i love it! we bought them while there in December- i got the parks one in the smaller size, but hate that size, it is hard to use and stiff. so my mom just ordered us all the bigger ones- so now i have this one and the clutch!!! so i guess i have all 3 now, but i love them!!!!!! i am NOT a huge purse nut or anything, but i just love this one particular print!!! we did order them online and it was super easy!

As for the airline/flight info- i used to travel a lot on business- here is what I can tell you:
You can bring food you brought from home or anywhere- it doesn't have to be purchased AFTEr the gate. However, liquids are the issue here, you can only purchase liquids AFTER the gate, so you can't bring bottled water from home in your carry on. But you can bring a granola bar from home or heck, a sandwich, whatever, just NOT liquid (they would take it from you at security). Once you go through security, you can go to mcdonald's and bring on a whole bag of food and drink if you want.
for my son- at 2, we took fruit snacks, goldfish/crackers, dum dums (to suck on), bought water/juice at the gate for him for his sippy cup. since our flight is only 2 hours, we don't need much. They will serve drinks on the plane too, so they will have juice, water and all that available as well- just be sure you have a sippy cup or whatever he drinks out of if he is not using regular cups yet.
You can take whatever you want in your carry on, as long as it meets the size requirement- doesn't matter what you put in there- 5 cameras or whatever. it just has to fit the size requirement.
typically when we travel out of dallas, we fly american. they allow you one carry on item, plus one personal item. it just depends on how strict the TSA agent or gate agent is with you. so that would mean i could take one carry on luggage bag, plus my backpack. now, if i have my purse too- well that counts officially as 3 items, which isn't allowed, so many agents have asked me to stick my purse into my backpack (even if it barely fits). so keep that in mind. your son also counts as getting to 'carry on' luggage too, even if he isn't carrying it himself. so for our Dec trip, for the 3 of us, we were allowed 6 carry on items- we had carry on:
*backpack (doubled as the diaper bag and i had no purse this trip)
* DS roll aboard luggage
*DS backpack
*another roll aboard luggage
*DH's backpack
plus we had the stroller and car seat. the stroller and car seat do NOT count towards the 6 items, they are sort of 'freebies', since we were using the car seat on the plane. we could have carried on one more item, but simply couldn't handle it (our arms weere full already!).
So you could basically have a backpack and your camera case. that's all. But then your son gets two items as well.
for wet wipes- i took a medium size travel one- no way was i fitting a huge full size one in my backpack. i shipped some diapers and wipes to our hotel room so they wouldn't take up room in our checked luggage (we were there for 10 nights, so needed a lot).
