Memorial Day Wknd: When should I go to Universal?

We are in Orlando for a week starting tomorrow (5/26). I had everything all mapped out and planned and now it seems that doing Universal (IOA and US) on Monday may not be the best plan. We are also planning on going to Universal Saturday night (we have 2 day passes) as we only have 5 day park hoppers at WDW and don't want to waste a day. It looks like Sunday is our best day but we have a Girl Scout function at Epcot. Guess we could blow it off but I am so confused! Any advice for us for over the memorial day wknd?

It's going to be busy most of the weekend plus there's a pretty good chance of thunderstorms Sunday and Monday. If you can wait to go later in the week, I would recommend waiting.
