Memorial Day suggestions outside of parks?

We're going to WDW 5/25-6/1, meaning that Memorial Day is our first full day. I expect the parks might be too crowded and we'd be better off waiting another day before tackling the parks. We're DVC members, and I thought of pool hopping, but Memorial Day is a no-no for that. Maybe we can go to Beaches and Cream (DS is dying to try that!) and then walk around the Boardwalk. Any other suggestions? Do you think ESPN might be too crowded that day? We want to see Fantasmic, but should we pick another day. We're staying at OKW, if that helps. Maybe stay there and rent surrey bikes? Suggestions?

We usually check-in on Memorial Day and then head to MGM. We eat, do a ride or two, and absorb the magic. I haven't noticed that the crowds are too-too dreadful. We don't try to do Fantasmic, though. Did it once and don't care to do it again anytime soon. Don't see what the buzz is on that

We were at OKW last Memorial Day and had scheduled golf at Lake Buena Vista for that day. We also avoided MK on Saturday. Crowds dwindled down fast after Monday for the rest of the week.
