im traveling single for the first time this week. I’m there for a conference, but is it easy to meet other single travelers at the resorts? Where are the best “mingling” spots?

Just for solo meetups, yes. You can post a thread to arrange a meet with others for meals, park days, or drinks. Alternatively, just go to the bars at the resorts(Trader Sam's is a big one there, at the Poly), or to the Boardwalk(Jelly Rolls or Atlantic Dance Hall) or any place with live entertainment in Disney Springs.
