Meals I can freeze

I have a friend who is going into surgury during my holidays. SInce it is knee surgury he will have a hard time cooking for himself. (he is alone). I what to make him up some meals he can just take out of the freezer and throw in the microwave.

Any ideas????

How about pancakes and french toast for breakfast. All he will have to do is pop them in the toaster.

Meatloaf, sliced and frozen then he can get the portion size he wants.
Sauces are always a good idea.

Chili is easy to freeze and reheat. So is spaghetti sauce, and it isn't hard to boil some noodles.

Speaking as someone who has experienced this, clean up is also an issue.

I would suggest individual serving frozen home made soups, caseroles or meat and veggies. I love those new plastic containers and they have some flat ones that are great for a couple slices of meatloaf and potatoes or a piece of chicken and rice. I love home made soups and the first few days those may be about all he will want to eat at one time.

What about giving him a box or two of crackers, some cheese cubes and baby carrots. Maybe a few containers of yogurt? Also some jello and pudding cups. That way if he just wants a small snack he will be well equiped with healthy foods.

Casseroles freeze well in single serving portions. I probably have some that would be helpful. Let me know if you are interested. Hey, why not double a few recipes and put some in your freezer while you are at it?
