That's a great question and I'd like to know the answer as well. Does having all the old information make the rest of the planning difficult or should we just delete it?
Why not just leave everything in place and still use the same account?
I guess I don't see the point in deleting friends and family. I guess if it's unlikely you'd ever travel with them again, then go ahead and delete them. If you don't want them to see your new plans, then check the settings where you link to other people.
But having extra people linked to your account doesn't make anything more difficult.
You can't delete past plans (room reservation, dining reservations, FP+ selections, etc.) and they don't show until you change it to display 'Past Items'.
You can't delete family & friends that you manage if they have active plans or if there are any MagicBands/Cards assigned to them.
I may be missing something but, does the app keep past trip information? When looking at mine I see only the current plans (I see someone noted as I was posting that past items can be seen if you ask for them. Thanks erionm!). Past Family and friends are still in the list but I'm pretty certain they are not added to new plans unless invited.
If this is the case I see no reason to add another account. The past stuff could be used as a reference I suppose. That could be useful. i also don't see a way to delete past items so, fortunately, we don't have to see 'em unless asked for.

If you are making a lot of ADRs, getting rid of prior guests helps save some time.
Say you have a group of 8 people traveling, and you have only those 8 names in your account (including yourself), when you book an ADR for 8 people, MDE automatically assigns all the names in your account as your guests. If you have 8 people traveling but 20 people in your list, you have to manually select each guest. (though I think you don't have to assign guest names if you don't want to).
Overall, a relatively minor issue, but just something to consider.
