I'm taking my girls on a short 2 day trip this May. Originally, we were going Memorial Day and either the day before or after. I was able to rearrange the trip two weeks earlier to May 11th and 12th. The crowd level over Memorial day weekend was estimated at a 9 while our new crowd estimate is at a 3. Not sure which day yet will be our MK day, but Sunday and Monday are not the recommended days for MK that week. I've been to WDW in June several times... can someone tell me how a busy day at MK during a slower time compares to a recommended day during a busier week?

It should be way less busy than the 9 on Memorial Day, but you still want to pay attention to the park recommendations. MK is always busier on Mondays. Looks like EMH at MK on Sunday, which accounts for it not being recommended. I would do this, especially if you are on-site and can use the EMH.

So an EMH Sunday at MK should be slightly less crowded than a Monday at MK? I'm use to June crowds so hopefully either one will seem slower to me. I wasn't planning on getting park hopping, so right now I am leaning on Sunday being the MK day.

Well, it is all about why it is a not recommended park. On Sunday, the reason is entirely the EMH. Monday is always a bad day for MK. Probably they will be similarly crowded, except that if you can use the EMH hours (11 PM to 1 AM) on Sunday, it will be significantly less crowded during that time. EMH is always recommended to avoid, but that's for those who are off-property and can't use the actual hours.

Personally, I think Monday in MK will be slightly less crowded than Sunday with EMH. Probably not enough to really make much difference, though.
