I have seen recommendations over here to cook the turkey on its breast for that reason. Glad to hear it works. I must look back for the cook ahead mashed potato recipe as it is always a rush last minute.

I've been making my mashed potatoes the day before Thanksgiving for years. With 40ish people and 20 lbs of spuds to peal, boil and mash it became impossible to do it the last minute. I just cook them up, put them in crockpots in the fridge overnight, plug in the crockpots for a couple of hours while the second turkey cooks (make one of those day prior also) - breast down for the first hour after brining in a mixture of wter, salt, brown sugar, 2 cut up lemons, 2 cut up oranges, rosemary, thyme for 24 hours. YUM! Maybe I will make another turkey for New Years. I still have 2 in the freezer that I got free at Thanksgiving. I bought so many groceries that they just kept giving me turkeys!! :rotfl: The potatoes taste just like freshly made....requires lots of butter and cream to keep them from being dry!
 
maybe we should ask on teh main board if anyone else has had a ballroom under the stars? I was picturing thousands of white mini twinkling lights draped from one side of the boat to the other, fresh flowers everywhere, soft romantic music playing, butlers walking around with trays of champagne and hors d'ouevres......that kind of thing

Warming cold mash can be a problem - crockpots sound a great way. I do shallow fry(not much oil) cold mash quite often. The crip outside layer is lovely.

An old traditional UK recipe is Bubble and Squeak - cold mashed potatoes and cabbage fried up and often served with cold meats. We used to use all sorts of veggies too.

It has been many months since I have been on here. We are joining y'all in May and have recently switched to main dining for my family!
I've tried to go back over the posts but you have been busy in my absence! I am cruising with my parents (60s) myself - Jolene, 31; my 2 girls 6 and 3 and my ex from Australia.
I know there were several websites out there for the WB cruise but I have been unable to do a proper search for them, can anyone help me?
I also know that originally there were hummers lined up for transportation, is that still in the works?
I mentioned before that I could teach Australian dancing on one of the sea days but I am going through a divorce process and have my personal possessions literally scattered all over the world! Some of my things are here in Minnesota, some are at my parents' house in MN and some things are still over in Australia. I am hoping to get my act together by May and find everything but if I can't find the music, we may be out of luck!
Are there any single moms going on this cruise?
Sorry I have so many questions but I wanted to check in with everyone.

I just showed the list of theme nights and told her I was interested in the Ballroom Under the Stars and she said they did that on her DVC member cruise in October and it wasn't outside like I'd been assuming. She said it was in the atrium and was very cheesy. :sad2: Let's hope ours is different!
:sad2: I hope that's not the case:sad1: I think all the theme nights will be fun..a little of everything!!!!

Welcome!!!!I will be traveling with DH DS(7)and DD(5). There are a good number of single moms if I'm not mistaken HollyTyler and Taysmom(I think) and others. Jump right back in. You'll find it doesn't matter the age, single or not...we are one big happy family! We all have one thing in common....we want to have fun:dance3:

I can't imagine packing a tru ball gown! Wow! I am looking online though, there are some gorgeous ones!

So this just hit me, you will have this AFTER Cabo, on the way to LA. Dancing with the Stars is on ABC which is part of Disney. What are the chances of you guys having some Dancing with the Stars on your cruise and/or a dance show/competition?

So this just hit me, you will have this AFTER Cabo, on the way to LA. Dancing with the Stars is on ABC which is part of Disney. What are the chances of you guys having some Dancing with the Stars on your cruise and/or a dance show/competition?

that would be kind of cool:cool1: don't want to get my hopes up. Hope they would offer ballroom dancing lessons on the cruise because its a two week cruise... by the time we have the ballroom dancing under the stars night we would know something:confused3 DH and I took some ballroom dancing classes years ago(before dancing with the stars) but all we remember is a little of the waltz. That would be great if they did something like that on our cruise :thumbsup2 I'm sure someone on this thread will post on their trip report if that happens or not:goodvibes May have to talk to DH about some ballroom dancing lessons...they are sooo expensive and we'd have to add babysitting cost to that too:sad2:

V- I must say that the make ahead mashed potatoes and cranberry chutney was awesome:woohoo: Everyone loved them:love: Thanks tonz:thumbsup2 I loved the idea of making homemade mashed potatoes ahead...I made the cranberry chutney ahead too and cranberry sauce. Something I do with my turkey that people might think weird is I start cooking it upside down and loosly covered in foil so the juices go to the breast and doesn't dry and flip it over half way through cooking and remove foil about the last hour to brown. I also marinate it the bird the night before after I clean it in vinegar and water and then lemon juice and water. It's the way my mom always made it so it is juicy and tasty...wondered if you ever heard of that? You are a great cook...love you recipes...my DH will thank you when he sees you too...I gave you all the credit:goodvibes Thanks;)

How come I always miss V's receipes? Although, we also flip our bird in my house.

we too took lessons years ago and yep, a little of the waltz is all that is left! :rolleyes: :lmao:

I'm already pulling DS out for 3 days for the EB, the WB would more like 2 weeks and he is done on 5/30. Not sure what day you all dock in LA (I think it was Memorial Day weekend), but still, he'd miss too much time at the end of the school year.
 
When I saw that theme night, I went to youtube and found online dance lessons, done in really short bits, but I think it would be easier with music and a partner.

I can do the box step and the box step in a circle that is my limit, I would need a really good partner, oh well.

I tried going back posts for you:scared1: but gave up and found it in some of my documents:

Refrigerator Potatoes (Make-Ahead Mashed Potatoes)
5 lbs russet potatoes

6 ounces cream cheese, softened

1 cup sour cream

2 teaspoons onion salt
1 teaspoon salt

1/4 teaspoon pepper

2 tablespoons butter

1. Peel and cook potatoes.
2. Drain well and mash until smooth.
3. Add cream cheese, sour cream, seasonings and butter.
4. Beat with hand mixer until smooth and fluffy.
5. Place in lightly greased casserole dish.
6. Dot with more butter.
7. Refrigerate until ready to bake.
8. Bake at 350 until heated through (about 30-45 min.).

You can make these ahead of time and just dot with butter and pop in the oven when ready to serve.



Cranberry Chutney

INGREDIENTS:
1 cup water
3/4 cup white sugar
1 (12 ounce) package fresh
cranberries
1 cup apples - peeled, cored
and diced 1/2 cup cider vinegar
1/2 cup raisins
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
DIRECTIONS:
1. In a medium saucepan combine the water and sugar. Bring mixture to a boil over medium heat. Add the cranberries, apples, cider vinegar, raisins and spices. Bring to a boil, then simmer gently for 10 minutes stirring often.
2. Pour mixture into a mixing bowl. Place plastic wrap directly on the surface of the sauce. Cool to room temperature and serve or cover and refrigerate. Bring chutney to room temperature before serving.

My DK are missing the last 3 weeks of school...my DS is only in first grade though...they'll just close out the quarter and grades early for him. I would rather miss the end of school than the beginning...that's where the public schools get their $ enrollement I think the first two days of school. They don't seem to do much the end of school anyways at these grades and I could get out of the hustle and bustle of end of the year parties and shows:cool1: now if you DS is in high school I understand because of exams...they don't have that in elementary school.
