I went to cookout where they made marinated chicken in Sprite (among other things), and everyone was talking about how they have recipes for orange soda marinades, etc. Has anyone ever heard of this? Do you have any good recipes to share?

I don't have a recipe but I have cooked chicken in orange soda before, I just put the chicken in it like a regular marinade. Yummy!

I don't use soda, but it sure does make sense: Sugar, acid and carbonation aid in either flavor enhancement, carmelization (making food golden brown and delicious), or tenderization, or a combination of all three.

Cola based marinades are common in this part of Texas. Here's one I use quite often. (For both smoked brisket and for skirt steak to use for fajitas.)

1/2 Cup Water
1/4 Cup Kikoman Soy Sauce
1/4 Cup Lea & Perrins Worchestershire Sauce
1 Cup Dr. Pepper
2 Cloves Minced Garlic
1 Tbsp Chili Powder
1 Tsp Apple Cider Vinegar
Cilantro Mixture (See Below)
Fresh ground pepper to taste

Cilantro Mixture
2 Tbsp. Extra Virgin Olive Oil
1 Cup Fresh Cilantro
Fresh sqeezed juice from 2 limes
- Run through blender until completely chopped / incorporated.

Brisket / Skirt Steak - allow to marinade at least 24 hrs. For Brisket - slow smoke over low heat for 15-20 hours depending on size of meat. (You HAVE to use LOW / INDIRECT heat or it will burn to a crisp in that amt of time.)

Fajitas - Grill skirt steaks over Med-High heat until cooked to desired doneness. Slice and place on heated cast iron serving platters with grilled onions & peppers. Top with 1 tbsp garlic butter to give extra sizzle just before serving. Best served with warm tortillas and homemade salsa / pico de gallo / guacamole.

I have a CocaCola cookbook and it has some marinades in it using sodas. Not just Coke, but others as well. If you're interested, I can post a couple of the recipes.

I mostly make barbecue sauce using coke and ketchup.

I would be interested in seeing some of the marinades from the Coca Cola recipe book, eeyore74. DH is into meat rubs and marinades!! I, too, would like to learn more.

Last Christmas I had a ham that was marinated in coke. They said they literally just soaked the ham in a pot filled with Coke, and then baked it normally. It was very juicy and sweet! :-)
