Extra clues - maybe! The hotel is still there and going strong - even had a big expansion a few years ago. Still has restaurants that were open when this one was but this one didn't take off in the same way.

This one was obviously too obscure. The dish came from Ariel's at the Beach Club. Sadly this restaurant seemed to shut very soon after it opened although it was used for conventions longer. I think even the name has disapeared now.
