Is there a place to drop mail while either at the resort or in the parks?

Yes. There are drop boxes for outgoing mail at the Front Desk of all the Resorts. And there are some mailboxes scattered around the rest of property. There are some actual mailboxes in MK; Disney collects the mail from them and takes it to the Post Office.
