Let me see if I've got this right for my upcoming November trip... Reserved ME through DVC for airport to resort transportation and ME through DCL for resort to ship... I just get so confused! Did I so it right?

Nope. I think you have the right concepts just not the correct name.
ME is from airport to resort and back only. You need to reserve cruise transport through DCL but I its usually called something like ground transportation.

We also found it much cheaper to book 2 one way car rentals for our cruise than the price Disney charges.

Disney cruise transfers are $35 per person each way. At least that's what we were quoted by Disney for our April 2012 cruise. With 3 people at $210, it's cheaper to rent a car.

Yea, I fixed that. That's what I meant. $210 total round trip for 3. I can rent and pay to park for our 4 day cruise cheaper than that. I just got a two week rental for our October trip less than $250 all in (taxes and fees included).

Yep, us too. We always rent a car. Alot cheaper, esp. since we are a group of 6...which would cost of $420 using Disney Cruise transportation!! We've done the drive several times now and it's not bad. Takes about 1 hour and the directions are pretty easy to follow. Our next cruise is April 22, 2012!
