Our flight arrives at MCO at 8pm. Saw the magical express says that only arrivals after 10pm have to take your own luggage to the bus otherwise it will be picked up for us. With arriving at 8pm - anyone have any issues with them getting the luggage to the hotel at a decent time?

Since it's typical that luggage gets to your room 3 or so hours after you check in at your resort, it could be after midnight in your case. You can tell bell services to hold your luggage until the next morning- just pack what you need for the first night in your carry-ons.

Yep unless you want them bringing the luggage after midnight, tell them to hold it until the next day and pack jammies and a change of clothes in a carry on. Or pick up your own luggage and take it with you on the bus.

If you don't put the DME tags on your bags you can still pick them up yourself and take them to the DME bus. If you put the tags on they will likely arrive between 11-12.

That's probably best-case. Disney states that luggage should arrive in your room about 3 hours after you arrive at your resort- not from the time your plane lands. Given that it typically takes one 70-90 minutes to arrive at one's resort on DME after landing, and with the OP landing at 8pm, the OP should get to the resort between 9 and 9:30. Luggage would then arrive after midnight.
If it were me, I would just have bell services hold them until the morning.

On our last trip, we arrived at MCO at 815pm. Staying at AOA- our luggage was brought to our suite around 1130pm. Once we were dropped off at AOA, we checked in and grabbed a bite to eat so it wasn't like we were sitting around for hours waiting on our luggage.

With an 8pm arrival, I would plan to retrieve my own luggage and take it to the DME bus, and have it stowed underneath.

The luggage service is great, but with a night time arrival I'd rather have everything with me for that night, and the following morning.

We had a 9pm arrival for our last tip. We bit the bullet and let DME bring our luggage. Because we didn't arrive at our hotel until after 10, they automatically held our luggage. The left us a voicemail early morning letting us know they had our bags and to call when we were ready to receive. This worked for us as we bring a carry on with the essentials (bathing suites, toothbrushes, PJs, etc).

We arrived around 8pm on our last trip, and we just grabbed our bags. For us, it was easier having our bags so we could hit the ground running the next morning.

I your situation, I would much rather grab my bags and know I have them rather than be waiting around wondering when they'll arrive, especially if you plan to be up early in the morning.

Pack what you need for the first night in your carry-on. Tell the desk to hold your checked bags when they show up. Then put the privacy tag into your door slot. Call down the next morning when you need your bags. It is that easy. I'm a big believer in not spending any more time at the airport than necessary on my way to WDW. There is no need to waste time getting your own bags.

We land at 7:45 and don't want to get out own luggage. Should I call them when we're in the room and ask them not to hold the luggage until the morning? We have an early morning ADR so I'd rather them bring it at midnight so I know we have it for the morning.

Sure. That's just what I would do in that situation.
