When booking your trip, are you able to upgrade your Magic Band to say the Stitch one during the customization time frame?

No. The free bands are just what you see.

If you want a fancier band then you can buy it through Disney store etc.

You aren't. The complimentary bands are chosen from a selection of solid colors. Additional colors, as well as those with designs, can be purchased in the parks, at the resorts, or online.

You could always buy some skins or decals to put on the free one. I haven't done that yet but am planning it for my next trip.
