Lunch on camping trip with 30 people-ideas?

It's almost time for our annual camping trip with our friends from our old town. We are to bring lunch for one day for about 30 people-adults and kids ranging from 5-20. Our stand-by is make your own sandwiches but I thought I would ask here for other ideas. I know one family is doing tacos for dinner and the other 2 meals would be breakfast so anything but those.
 
Hot dogs and/or hamburgers with potato salad and some fruit?



I need to figure out what to pack in the camper for our trip over the long weekend. Not so easy with a toddler who pretty much subsists on hot dogs, pasta with red sauce, chicken nuggets, yogurt and fruit!! I wish I could fix the kid a PBJ!
 
campfire pizza's??? Using a tortilla shell as the crust - and then basically "build your own".
 
Chicken salad? You could make it ahead of time and keep it in a cooler, then just dole it out onto buns or croissants. Chips and fruit on the side. That's our standard boat or beach lunch with a crowd.
 

Make a big pan of baked Ziti in a throw away pan before you leave. Freeze it then you can heat it up over the camp fire. Bring a salad & some bread.

I would do a "Sandwich Bar" (white, wheat... turkey, ham, bologna... lettuce, tomato... mustard, mayo...) and a "Chip Bar" (regular potato chip, bbq potato chip, tortilla chip... french onion dip, ranch dip, salsa...)

I third this.. Personally, I wouldn't want a heavy meal at lunch time..:)

A friend of mine has a crimper tool she bought from Pampered Chef. You cut a PB&J sandwich with it, crimp, and you get something that looks exactly like a "real" Uncrustables. It's probably a lot cheaper to make your own sandwiches. My friend has done the same with bologna and cheese.

OP, I'd go to the good Italian deli in your neighborhood and order 8 heroes, cut in quarters. I'd do two basic Italian (ham, salami, provolone), two American (turkey, roast beef and American), two hardcore Italian (prosciutto, soppresata, fresh mozz, roasted red peppers), and two eggplant (fried eggplant slices, fresh mozz and roasted red peppers). For a side dish, I'd either make a big tossed salad and bring the dressing on the side. Or I'd cook two boxes of tri-color rotini, add some cut-up veggies, and a cruet of Good Seasons Italian.
 
Pulled pork sandwiches. Do pork ahead of time in crockpot with sauce and keep it in crockpot. Bring some kaisers and chips, etc.This will simplify the sandwiches even more. Another possibility could be roast beef sandwiches.

We have some pulled pork left over from DS17's graduation party-this might be an idea :thumbsup2.
 
30 people isn't a camping trip, it's a rock concert. I vote for hotdogs over the campfire and smores.
 
Cold spiral baked ham with potatoe salad and rolls.:) Doesn't get much easier than that.
 
Pulled pork sounds great. Maybe a bunch of bagged salads with fixin's if anyone doesn't eat meat?
