I am planning to arrive at Disney on November 30th, but now questioning. I was in the hospital over the past month with acute pancreatitis from a stone stuck in my bile duct and had to have my GB removed.
The pancreatitis was pretty severe, I am still not completely healed and I have to have another procedure to have fluid drained from it. 
I am not as concerned about the potty issues (from the GB and digestion issues) as I am allowing my pancreas to heal completely and not causing another stone that could get stuck in the bile duct....especially while on vacation. The doctor said the best option is to eat lower fat for 6 months while my body regulates.
I know that is easier to do when you choose sit-down and you can easily tell the server about dietary requirements (no butter, use lower fat milks, etc) For counter service, it seems like everything is deep fried and covered in gravy. (Yzma from Emperor's New Groove) Are there any counter options that do not fall under the "fast food, bio-engeineered, processed" umbrella? The only thing I can think of is a sandwich, but 8 days of sandwiches does not sound like fun. Salad is an option, but dressings are either loaded with fat/oils or simply do not taste good.
