Lower-fat options for counter?

I am planning to arrive at Disney on November 30th, but now questioning. I was in the hospital over the past month with acute pancreatitis from a stone stuck in my bile duct and had to have my GB removed. :( The pancreatitis was pretty severe, I am still not completely healed and I have to have another procedure to have fluid drained from it. :(

I am not as concerned about the potty issues (from the GB and digestion issues) as I am allowing my pancreas to heal completely and not causing another stone that could get stuck in the bile duct....especially while on vacation. The doctor said the best option is to eat lower fat for 6 months while my body regulates.

I know that is easier to do when you choose sit-down and you can easily tell the server about dietary requirements (no butter, use lower fat milks, etc) For counter service, it seems like everything is deep fried and covered in gravy. (Yzma from Emperor's New Groove) Are there any counter options that do not fall under the "fast food, bio-engeineered, processed" umbrella? The only thing I can think of is a sandwich, but 8 days of sandwiches does not sound like fun. Salad is an option, but dressings are either loaded with fat/oils or simply do not taste good.
 
CHH in MK has salmon and it comes with rice and green beans. Saultii in AK has bowls that you choose the base and the protein and they have lower fat options-the dressings/sauce you also choose and you can get it on the side. In Epcot there are lots of choices. Sunshine seasons has salmon, rotisserie chicken, etc. The mexico QS has chicken tacos without cheese. Hollywood there is a turkey sandwich at the QS in Toy Story Land. I think the ABC commissary has some salad options.
 
Don’t discount looking at the kids menu, because they have those Mickey check meals which should be very low in fat… Like chilled chicken, turkey, yoghurt, etc… and they usually include a piece of fruit and a bottle of water. I am thinking you might want smaller meals anyway, so you can gage how your body feels.

Yes - the check meals are an easy way to identify some healthier options!

ABC Commissary at DHS has a mediterranean salad with chicken. It is a full meal. Not sure if vinaigrette dressing is too much for you, you maybe able to order without?
- Marinated Chicken served over Mixed Greens with Tomatoes, Cucumber, Pepperoncini, Kalamata Olives, and Feta tossed in a Mediterranean Vinaigrette served with Hummus and Grilled Flatbread

I don't quite understand your medical situation - Gall Bladder gone would indicate no stone source.

You might consider having whatever you order "deconstructed" and pick out what you desire. Request any sauce on the side. Mobile ordering could be difficult too.

You have plenty of time to research menus that coordinate with your planning.

That is not medically factual. You can do the research on it yourself, but stones still form without a GB and they can get stuck in the Common Bile Duct.
 
I eat low fat post gall bladder surgery (plus WW), and I eat very carefully when travelling. I remember a very good grilled chicken sandwich at abc commissary, a chicken salad at Docking Bay 7 at HS. When I was early post surgery, I took my own fat free or light salad dressings. I found individual packets on Amazon, which made them easy to carry. I did better at Satuli Canteenat AK with the salad base than the grain base. At Epcot, there were chicken choices at Sunshine Seasons, and the chicken skewers at the Morocco stand were really good, as is the naan there. The barbecue ( chicken or pork) at Regal Eagle Smokehouse was delicious and within my fat parameters. At MK, I think I got a Southwest chicken salad.
