Low Salt/Low Fat recipes that taste good?

DH recently had bypass surgery and is now on a low salt/low fat type of diet.

Does anyone have any recipes that are low in salt/low in fat but actually taste good?

You can make a low fat bolognaise by draining the meat over a bowl after browning and use a home-made stock (or a salt-free ready made one). Make up for deficiency of salt by adding more black pepper. Lots of weight watchers recipes are very good - try some of their cookbooks - or you can make fantastic soup by roasting root veg beforehand - it gives a greater depth of flavour.
 
He will actually get used to a low salt diet. It tastes bland at first, but the taste buds adjust. Believe it or not, later, he will eat a regular salted item he used to eat before and it will actually taste TOO salty.

As for low fat, fats come mostly from proteins & oils. Change every thing over to low fat versions in the same recipes: low fat milk & cheeses, lower fat beef. Eating more chicken & fish instead of beef & lamb.

Switch from butter to Smart Balance or I Can't Believe It's Not Butter spreads.

You can also substitute low fat evaporated milk (not sweetened condensed) in a recipe for half & half or cream. It is just as rich in flavor & texture, so you never notice you've cut all the fat out. :thumbsup2
 
We've already made some adjustments. DH is diabetic so we've tried to eat healthier in the past, our problem was not eating regularly. But we're working on that! I can't get him to eat fish (he hates it, except for tuna - but I hate tuna). :) We do eat mostly chicken and occassionally beef (very lean cuts).

We've also been using "Can't Believe It's Not Butter" for years. :) And because both of our moms had high blood pressure we learned to cook without salt. So we're kind of on the right path there.

I'll have to check out the Weight Watcher's cookbook. Thanks!
 
Also half fat creme fraiche can be used instead of heavy cream in many dishes - its better for cooking anyway as it doesn't split when heated! Venison and ostritch are also lower fat but still have the iron of red meat (ostritch needs marinading)

Go to edietshop.com. They specialize in low salt, low calorie, sugar-free items. I heartily recommend the chocolate cheesecake mix (which I eat as a pudding), as well as the whipped topping mix. I buy the mixes by the case. They also have cake mixes, etc.

Just joined and saw this thread so I hope you don't mind a few suggestions as I am also on a low fat/low sugar moderate carb diet due to diabetes.

You can use no fat half and half in place of milk and creme with great success.
As mentioned Weight Watchers recipes work well, but if you can get a hold of some cook books from JoAnna-Lund there are many easy and good tasting recipes that will work (using her healthy Exchanges system). Joanna is no longer with us and somebody new has taken over her company , but her original books can be found in the library and for sale all over.
