Low carb muffins

I'm trying to do the no flour, no sugar diet or as low carb as possible.

Question for you all -- what is considered low carb? Been trying the low carb bread and wondering if it is acceptable for dieting.
 
My dh has been doing Atkins for about a year now.

The Ketogenics choc chip muffins are excellent. He loves them. He recently tried the Ketogenics choclate bars and he said they are THE best he's had.

It depends on how extreme you are looking at the plans. Atkins induction phase is no more than 20 carbs per day. But once out of induction (really where you lose a lot of weight) the level of carbs you can come back up to varies from person to person. I've seen numbers from 40-60. Still means skipping those sugar-full drinks. :)

Blondie, I said the same thing!

I felt like all of my DIS friends were doing it, all of my RL friends were doing and all of my co-workers were doing it, too. Me, I REFUSED!

No bread? No pasta? No WAY.

Well at the end of 2 weeks I could just SHOOT myself for fighting for so long. The energy I feel is unbelievable, I was able to drop two medications and I FEEL better than I have in years.

My son asked me why do we feel so much better and I just told hiim that sugar is a drug and we were addicts! :p

I'm thrilled we gave up stuff that was literally hurting us and neither one of us are in any quick hurry to be like we were just 2 weeks ago!

I usually buy the Atkins Bread, which is so filling I can only eat a slice at a time.. Can't wait to get baking! Thanks:D

Robin - I just tell people I am allergic to sugar..... it makes me break out in FAT!

Seriously, the health improvements overall made me a convert almost instantly too. I dropped my cholesterol over 60 points (LDL and Tri's dropped like a rock and my HDL increased). I also was able to get off my medication for my mitral valve prolapse. Not to mention the lack of hunger, and emotional roller coaster that I used to go through because of blood sugar levels going all over the place during the day.

I would not go back to that for anything. :)

Anyone who is interested should seriously take the time to read the appropriate book for the plan they are interested in. You really need to understand the "WHY" this works in addition to "HOW" to do it. The paperback books for any of the low carb eating plans are generally widely available for around $7 or can be borrowed from the library.
 
Thanks for the encouraging words Robin! I'm doing Weight Watchers which is more my style, I can still eat what I want, withing limits ofcourse! I refuse to give up carbs, I just can't bring myself to do it! Now, when I plateau and stop losing with WW, I might think of doing a modified Atkins (more protein, less carbs) but for right now, I'm sticking with WW.

In my opinion, I'm still concerned with the long term affects of all the fat and protein in the diet. I think the Atkins diet is ideal for short term use (meaning for weight loss and maybe a modified Atkins once the goal is reached.) But I still can't accept that going into ketosis is a healthy way to live, or that all the excess protein and fat is good for the coronary arteries.

We just had a discussion at work the other day of what the long term outcome (meaning years down the road) of the Atkins diet will have on the kidneys, heart, etc.

The Atkins diet really is a revolution at the moment, like I said, I think I'm the only one NOT doing it! I'm wondering if years from now we'll see lots of direct adverse affects of long term Atkins dieting, either good or bad. I think it will take a while for all the statistics to come in, I don't think there's ever been a time when so many people were on Atkins!

Robin... The only low carb bread I like is the one that Harry's/Whole Foods makes in their stores. I would suggest using it inplace of a bun. I even use it instead of hotdog buns.

I haven't tried any of the low carb quick break mixes but I love the Atkins chocloate Chocolate chip cookie mix. It is harder to find than the muffin mixes however so I order mine by the case through a co-op.

Noe has anyone found a good pasta? The Atkins is OK but not great.

Oh the Keto's instant mashed potatoes are really good.
 
Blondie - There are many people who have been eating low carb for a very long time. And they are doing wonderfully I can assure you. I hang out with alot of long term low carbers on another major internet site. The recent popularity is just a result of many studies pointing to the efficacy of it. However, many people were on to this LONG before the studies affirmed the benefits. Just to set the record straight - I eat low carb ... not "no carb". The only thing I have completely cut out is sugar, refined flour, transfats, and highly processed foods (white rice for instance). I eat no more meat than I used to before... just cut out these items and added more low glycemic veggies and fruit (berries etc.) and nuts. The "Standard American Diet" which includes a LOT of sugar and refined carbs PLUS fat is truly "SAD". I applaud anyone who makes good changes to their way of eating... no matter what course they take. I just hope that you would read more about this before declaring it "bad".

For the life of me ... it totally amazes me when statements are made about how bad this way of eating is.. so TWINKIES and SUGARY CEREALS along with FRIES and a PUFFY WHITE BREAD BUN on my burger would be better for me?! Not! I'll eat my steamed veggies with cheese sauce and a nice piece of salmon or steak any day of the week. :)

I thought the very same things Blondie did and was a STAUNCH negator of this plan until I read the book. Then it all made so much sense.

I realized that between my son and I we were eating nearly 1,000 carbs a day! Most of it was in fruit juices, cookies and pasta. Just eliminating those things have totally changed both of us.

Finding replacements for the fun stuff has been a challenge but it keeps us on program.

I am a lifetime member of Weight Watchers, they have an awesome plan but I was always hungry on it. I spent all day counting points and feeling deprived. I can honestly say I am NEVER hungry on this plan. Without the tease of a little sugar, your body doesn't ask for it. I've had my son off of white sugar for two years and his teachers THANK me for it. I think ritalin wouldn't be prescribed as much if the sugar intake in children was drastically reduced. I have a friend with three children on ritalin and she literally POURS sugar in them! No offense, I know it's not always the case but I know it worked for my son. He had trouble focusing and would fall asleep in the middle of the day until I took him off ALL morning sugar. The difference has been phenomenal.

I never thought this would work for me, but for now, it does. My aunt, who has been doing low carb for two years has cancer and diabetes. She was taken off her insulin and looks younger than I do. She never talked me into it, the way she looks and feels is enough for me. BTW, she's 62 years young... :p

Nope you're not. My New Years resolution was to stop dieting and worrying about my weight. I can get very obsessive at times and now I'm just trying to concentrate on adding some exercise every day for my health. My husband even threw my scale away because he said he was sick of me constantly worrying about my weight; as long as my clothes fit I'm trying not to worry about it but it's hard after years of obsessing.

If anyone is interested in trying Atkins, try reading Atkins Essentials...it's much easier reading than Atkins New Diet Revolution, and it's a great book to get you started.
 
i'm so excited - I just found Ketogenics low carb products at my local Cub Foods right next to all the Atkins stuff. They even had the muffins, so I bought the chocolate chip and blueberry. I can't wait to give them a try! :)

As far as the discussion about low carb and long term effects - one of the things I like about the South Beach is that it was designed by a cardiologist who kept finding the diets he suggested to his patients to help them lose weight and lower their cholesterol weren't working. Some low carb diets will let you eat as much fat as you wanted as long as it was with protein; obviously a heart doctor isn't going to be too keen about that. This diet seems to be well balanced; South Beach is designed around helping you understand which carbs and fats are good to have even when you are trying to lose wait and which should be avoided.

It's an interesting book to read, and I felt it made a lot of sense. And it is hard to argue with the results. I'd recommend it to anyone even if you don't want to actively diet.

As much of a bread, potato & pasta lover as I am, I really don't see this as being a lifestyle change in how I eat. I'm not willing to give that up long term, but I will try to make better choices more often - eat more whole-grain breads, smaller helpings of pasta, etc.

Exactly. Atkins was created by a doctor and has been around longer than I have been alive! I just wish I had known about it in my 25+years of trying to lose weight the high carby-lowfat way. Trust me, I used to exercise 6 times a week, 1 hour a day each and saw virtually no results. When I gave up the bread and sugar, I did it only to prove yet another diet wrong. Well, I lost 42 pounds in about 6 months doing low carb and I eat more vegetables now than I ever have in my life! I eat fish, and meats and cheeses. I occasionaly(sp?) eat lc bread but I have learned to do without it but am still glad that the choices are out there if I choose to take advantage of them. (Soday, candy, snacks if you so desire to endulge in them are also available sans the sugar!)

I post on the Atkins board (that is how I heard about DISboard.com-Hi DixieDreamer! (Remember me? From the 'Oprah Challenge'? :wave: ) and there is a wealth of information and a ton of support.

I'm glad that there is a store in Chicago or lc eating. I will have to take a trip downtown to check it out! I wonder if they have a Cafe? I will go and check out the site.

And a Chicago DIS-LC Gathering sounds awesome! You all can fill me in on the details of how to enjoy my first trip to Disney! I plan on staying there 2 weeks...hmmm...is that long enough?
