Low carb eating on the Fantasy?

Does anyone have any experience eating low carb on the Fantasy? How receptive/knowledgable are the wait staff about low carb eating? Any options on the menu specifically for low carb? Just wondering
 
I was able to make pretty good choices on the Dream. Step 1 is obviously not eating the bread and dessert course. I "saved" all my carbs for dinner by being very selective at breakfast and lunch. Those are places you can easily make good choices with eggs, salads, etc. (I'm working on the assumption that you aren't talking extremely low where even lettuce is too much.) I didn't ask for any help, but I was able to navigate quite well on my own.
 
assuming normal low carb (avoiding white starches, etc.), it's more about will-power. Breakfast: limited fruit, omelet, plain yogurt, maybe high fiber cereal or a bit of oatmeal, lunch: salad with lean meat like fish or chicken or hamburger with lettuce, or some chinese meat wrapped in lettuce, dinner--no bread and no starch (ask for an extra salad or side of veggies). If it's too tempting, ask for then to leave off rice/potato. Taking veggies from lunch buffet and eating in room before dinner helped me avoid bread. Walk at least 30 minutes fast on the promenade deck to burn some of those carbs.
 
I managed to do two DCL cruises w low carb and reduced sugar diets and still ate to my hearts desire but barely gaining 2lbs.
Few things that are important and keep in mind:
- of cause stay away from pop and alcohol though I did gin Tonic when I really felt like some
- DCL food is so amazing and the service is superb. I usually feast on 2-3 appetizers and 2 entrees only focusing on protein and veggies and tell them to skip the starch. With all the amazing protein you really won't miss the starches. And don't be shy and if you feel guilty explain your diet to them. But by the end of my first cruise everyone in my party started following suit
- oh huge exception is the mouth melting lasagna at Paolo :'( break the rule for that as its oh so good
- skip most desserts but make exceptions for when it counts!! You are on vacation!
- when you skip desserts be ready for .... Well you will find out I think ;)
- oh goofy's? Soft ice cream was hard to resist on a nice day by the pool though... So hard
- oh I let myself go and had also a Micky bar :P. But maybe take a picture with it and give it to your other half to eat. It's good ice cream and really thick chocolate but don't eat this and keep the quota for all the other goodies
 

I'm a Diabetic and a low carb diet is my life. I did just fine. My sugars never spiked and like others said, be careful of the breads. Most options contain Meat/Fish so stick with that. They also have no sugar added desserts. Happy Cruising!!!
