I'm on South Beach Diet. I'm trying to add more veggies to my diet. I like corned beef and cabbage, but living alone, it would take me a month to get through a a slab of corned beef, (the way they sell it here.) Plus, corned beef is very fatty and I'm not sure it's really allowed on SBD. I don't have a good freezer, so freezing large amounts of leftovers is out.

Do you have a good way to cook cabbage? :)
 
There's only two of us, so it would take forever to eat a head of cabbage. I now buy the shredded cabbage marketed as "cole slaw mix" and stir fry it. Sometimes I shred in some carrots or onion or broccoli stems. I use a cast iron skillet with a little olive oil in it and just stir it around til it's limp, or else just 'brown it' and slosh in a little stock and put a cover on it til it steams done. Serve under a nice slab of salmon or boneless chicken.
 
Thanks. I hadn't thought of buying the pre-shredded cole slaw mix. Your recipe sound quick and yummy. :)
 
This is surprisingly tasty for a simple dish, and you can freeze it in portion sizes (in Tupperware or old ice cream boxes) so you don't need to eat it all at once :thumbsup2


Hungarian cabbage noodle serves 4-6
60g butter or duck/goose fat (or a mixture)
3-4 tbsp vegetable oil
1 small onion, finely chopped
1-2 tsp sugar
2-3 tsp salt
1 white cabbage (about 1.5kg) grated or very finely chopped
fresh ground black pepper
500g farfalle (bow) pasta (or equal amount of fresh pasta/lasagne, cut into 2cm squares)

Put the grated cabbage in a large bowl and sprinkle with the salt. Leave for 20 mins. Melt the fat in a wide, deep pan with the oil. Squeeze the liquid out of the cabbage (hands are best!) and add to pan with the onion. Add 1 tsp sugar, toss everything around until well mixed, and cook on a moderate heat for around 25-30 mins until soft and tinged golden. Set aside.
Cook the pasta according to the pack instructions. Preheat oven to 160°C/Fan 140°C. Drain the pasta well.Take a large deep roasting tin. Starting with a layer of cabbage build up alternate layers of cabbage and pasta (just roughly spoon it in) with an occasional good grate of black pepper and the other 1 tsp sugar. Stir it about so the pasta and cabbage are well mixed.
Cover with foil and cook for 20-30 mins until hot and soft. Either eat at once or portion it up for later (store in fridge or freezer). Serve with plenty more black pepper to taste.
 

I love cabbage. I too buy the pre shredded coleslaw mix and use it in stir fries, soups and salads. I also make it into coleslaw using low fat may, some grated onion and salt & pepper.

I like to quarter a small head of cabbage, steam it and spray on some butter spray, season with salt & pepper...yum!!

I take a head and and slice it up. Boil or steam it with bacon. I put vinegar on it like you do spinach.

I love cabbage rolls too. You could minimize the stuff you put in the middle.

Butter Braised Cabbage

5 tablespoons Butter
2 teaspoons Curry Powder
8 cups Cabbage; finely sliced
Salt and Pepper
Heat butter with curry powder in a large saute pan. Add the cabbage and stir to coat with butter. Cover, lower heat and cook gently for 5 - 6 minutes, stirring occasionally, until the cabbage is tender. Season with salt and pepper. Makes 4-5 cups.

Ah, found it! This one sounds awesome. It must be the hamburger. :rotfl:

Here's a recipe my non-cabbage loving family raved about:

Crockpot Cabbage
2 cups cooked rice
1lb hamburger
1 med onion, finely chopped
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning
1 can diced tomatoes
1 can tomato sauce
2 tbls Worcestershire sauce
1 small cabbage, sliced
Mix rice, hamburger, onion and seasonings. In separate bowl, mix tomato sauce with Worchestershire sauce. In crockpot, layer cabbage and meat mixture with tomato mixture over every layer. (Usually get 3 layers of cabbage and two of meat.) Cook high for an hour or two and low the rest of day, but if start early in day, can cook low all day.
