Does anyone have any fun cookie or cupcake recipes for back-to-school? I want to make some for my 2nd graders class. Something unique.

Check the school's policy first. Many schools will only allow store bought items into classrooms.

I don't have a recipe for this, but since it's apple season, why not caramel apples. I'll look through my recipes to see if I can find one for you.

Found this easy and fast recipe.

Refrigerate the apples for a min of 15 minutes so the caramel can firm up on the apples before serving.

Caramel Apples

INGREDIENTS:
6 apples
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons milk

--------------------------------------------------------------------------------

DIRECTIONS:
Remove the stem from each apple and press a craft stick into the top. Butter a baking sheet.
Place caramels and milk in a microwave safe bowl, and microwave 2 minutes, stirring once. Allow to cool briefly.
Roll each apple quickly in caramel sauce until well coated. Place on prepared sheet to set.

Try checking the Martha Stewart website, she always has a bunch of cute ideas and some of the cupcake ones that I have seen were not that hard and cute.

Here's a cute idea from family fun magazine, the book cupcake:

Or you could make butterfly cupcakes. To make them you cook cupcakes like normal. Then, when cool cut the tops off. Then, cut the tops in half. Then take the half pieces and turn them to look like wings on top of the cupcake. Frost the top of the wings and then dip in sprinkles. Then use frosting to glue it to the top of the cupcake. HOpefully, I am making sense.

Also, there is a school bus cake if you are interested in that.

Good luck and have fun!

Thanks for all the GREAT replies!! My daughter loves butterflies so I definitely will check those out. The caramel apples sound like a must to do at our house sometime before Halloween. And of course, Martha. I'm still one of her die-hard fans. I had recently thrown away all her magazines in an effort to clear the clutter out of my house!

Thanks everyone. I'll let you know what I end up making.

Wow how nice it must be to still be able to do that. We can only bring in store bought and packaged treats with no peanuts.

I would have loved to bake for my kids bday and do the whole thing like my mom did for me :)
