Looking for two mint cookie recipes

Hi all,

I am looking for two recipes that I can't seem to find anywhere in my house, I am afraid that when I did my major cleaning this year (in preparation for a move that hasn't happened yet), I threw out the recipes.

I am looking for a Thin Mint Cookie recipe (like the ones that the Girl Scouts sell), I remember that it was made with Ritz crackers and melted chocolate with mint extract in it.

The second cookie recipe I am looking for is for a chocolate cookie (I think mint flavored) and when it comes out of the oven, you put an Andes' Mint on top and let it melt.

Can anyone help me with these recipes? I have looked on Allrecipes.com, but I can't find anything that sounds like what I am looking for. Any help would be greatly appreciated.:santa:

Have you tried Top Secret Recipes or CopyKat recipes?

I think I recall that one (or maybe both?) have a recipe to make cookies that taste like the Girl Scout Thin Mints...
 
Knew I had this one, but had to find it!

Chocolate Mints

¾ cup butter or margarine
2 eggs
1½ cups brown sugar, packed
2½ cups flour
2 Tablespoons water
1¼ teaspoons baking soda
1 pkg (12 oz) semi-sweet chocolate chips
½ teaspoon salt
Green chocolate mint wafers (Andes)

Heat butter, sugar and water in heave saucepan over low heat until butter is melted. Add chocolate chips and cook, stirring constantly until partially melted. Remove from heat and continue stirring until chocolate is completely melted. Pour into large mixing bowl and let stand 10 minutes to cool slightly. With mixer at medium speed, beat in eggs one at a time. Reduce speed to low and add dry ingredients, beating until just blended. Refrigerate about 1 hour.
Preheat oven to 350 degrees. Line cookie sheets with foil. Roll teaspoonfuls of dough into balls; place about 2 inches apart on cookie sheets.
Bake 12-13 minutes. Remove from oven and immediately place mint on each hot cookie. Let soften, then swirl mint over cookies to frost. Transfer to wire racks to cool completely.
 

Here's the one from the above mentioned link which DD8 and I made last year. I also plan on making them this year. Have fun! (Last year I used the mint flavored candy discs from Wilton-easier than using semisweet.) Enjoy

Thin Mints

1 lb. semi sweet chocolate (best from specialty bake shop but can use chocolate chips)
1/8 tsp peppermint oil (not extract)
melt chocolate with peppermint oil. Dip approx. 1 sleeve Ritz crackers in it and cool on wax paper. Taste like Thin mint Girl Scout cookies!
