Looking for Something Special with Minnie for my Niece

My niece loves Minnie and I am looking for a very special treat for her during her trip at Easter time. I was hoping to get some ideas from all the knowledgable folks out there. I was thinking of a way for her to meet and interact with Minnie other than you normal character breakfast or signings. Does anybody know of anything like this?
