Looking for hotel/resort recommendations at the beach

WE are looking to take a trip, week to 10 days, mid May. We had originally planned on Myrtle Beach but then realized the time we would be going is bike week. Would be fine for just DH and I, but not ideal with our 2 year old.

We would like to take a beach vacation, we went to Vero in November and my daughter LOVED it. I don't really want to go further north than Myrtle, everything I've looked at says the temps in Outer Banks, Ocean City, etc. can be dicey that time of year.

We are in NY so would like to stick to East or Gulf Coast, driving or flying would be fine. We have considered Hilton Head, Destin, Tampa/Clearwater, Sanibel/Captiva. I am looking for recommendations of hotels/resorts with good pool/water areas for little ones and ideally a full kitchen as my daughter has several allergies so we tend to cook most meals. Also any other areas if someone has a recommendation.

Thanks all! I never realized how difficult deciding on/planning a vacation could be. I have been spoiled with the ease of our DVC the past several years!
 
One of our favorite resorts to visit on the Gulf coast of Florida is Waterscape on Okaloosa Island. Many of the units are available for rent on vrbo.com. The resort has a large pool area with a lazy river, kids pool, hot tubs for the adults, etc. One of the nicest pool areas I have seen on the Gulf coast. I believe all of the units have a full kitchen. You can fly into the Northwest Florida airport at Fort Walton Beach.
 
Hilton hashes is terrific and you can fly into Savannah or even Atlanta and it's a deer drive. Look on Redweek at marriott grande dunes, barony beach or surf club. All great.
 
We vacation at Fripp Island, SC every year and it a quiet family friendly resort with several pools and kid pools. It is just the island north of Hilton Head. Beaufort and Hunting Island State Park (with lighthouse) is nearby too.
