Looking for double baked potato recipe

We're getting together with some friends NYE. One couple is doing prime rib and I volunteered to do dbp and now can't find my recipe. Tried the search but was unsuccessful. Does anyone have a good recipe to share?

I've never used a recipe for these . . . I just scoop out the baked potatoes, mash them with milk & butter, then put them back in, sprinkle with paprika & put them back in the oven. If it's for company, I might put a bit of butter on the top & turn the broiler on for a minute - to make them turn golden brown on top. This is something that's different every time - depending on what's available in the 'frig.

Things I've added to the mashed potatoes:
sour cream
parmesan cheese
Cracker Barrel extra sharp cheese
cream cheese
garlic powder
parsley or chives

If you want an actual recipe to use . . . maybe you could use the "Au Gratin Potatoes" recipe from Cinderella's table for the mashed part. Now that sounds wonderful to me! I think I'll go defrost some bacon & do that for supper. Thanks for asking!
