Looking for corn bread

Thanks for posting it. That's the same recipe I have. On the plus side, it has vegetable oil instead of a solid shortening which is a little less unhealthy.

These days, they're the same. Soybean oil vs hydrogenated soybean and palm oil. 99% of "vegetable oils" are nothing but soybean oil. Canola and Corn Oil and blends are always labelled differently.

Actually, the shortening has less calories and fat than all of them because of the volume of air in the serving size (lard splits the difference...but is all saturated fat and introduces cholesterol, no one can seem to decide if food cholesterol is bad or not).

I do not like overly sweet cornbread, but I don't begrudge others theirs. It's one of those great foods that has so many regional/cultural/personal variations.

The QS at POFQ definitely serves cornbread with their chicken and rib platters, and you could use your QS credits. Hope you enjoy your cornbread wherever you choose to go!

OH! At lunchtime (maybe dinner too), Landscape of flavors at AOA has a barbecue pulled pork sandwich on cornbread waffles with homemade chips! It's pretty tasty!

I have the original Cooking with Mickey cookbook that I bought specifically for the Trail's End cornbread. It's the sugar that makes it extra tasty. Allears has it too:

Ingredients:
3/4 cup cornmeal
1 1/4 cup sugar
1 1/2 tsp salt
1 T. baking powder
1 3/4 cup flour
1/2 cup vegetable oil
1 cup milk
2 eggs


Method of Preparation: 1. Blend flour, cornmeal, salt, baking powder and sugar in a mixing bowl.
2. In a separate bowl, blend milk, eggs, and oil with a mixer.
3. Using that same mixer, slowly add the blended liquid to the dry ingredients prepared in step 1, mixing just enough to incorporate the wet and dry ingredients.
4. Spray a 9 x 13 baking pan with non stick food spray and pour the batter into the pan, spreading evenly.
5. Bake in a preheated oven at 375 degrees for 20 - 25 minutes. or until golden brown.
6. Allow to cool. Enjoy!

Boatrights (DELICIOUS) and Trails End for sure. Am I remembering correctly or do they have them at Whispering Canyon and Liberty Tree Tavern)?
Every time we've been at Liberty Tree they've had dinner rolls, with absolutely addictive honey butter. Whispering Canyon has cornbread with the skillet (and they have gluten-free as well, in case that's a consideration for anyone)
 
I have the recipe for the corn bread served at the Wilderness lodge. Got it from the chef at Whispering Canyon. I'll check back to see if there is any interest.
 
I enjoyed the blueberry corn muffin at Docking Bay 7. It wasn't too sweet, and comes with the Smoked Kaadu Pork Ribs
 
2 cups cornmeal
2 cups all purpose flour
3/4 cups of suger
1 teaspoon salt
2 teaspoons baking powder
1/4 cup vegetable or canola oil
1 egg beaten
2 cups milk
3 tablespoons honey

Preheat oven to 350 degrees. Grease a 9 x 13 glass caserole dish with cooking spray and set aside.

Place all five dry ingredients in a large mixing bowl and stir. In a second bowl, mix the oil, egg, milk and honey together. SLOWLY, add the wet ingredients into the dry ingredients bowl. Mix GENTLY, just until the ingredients are incorporated, using a whisk or electric mixer set on low. Do not overmix.

Pour batter into prepared pan and bake at 350 degrees for twenty five minutes until golden brown and a toothpick inserted in center comes out clean. Let cool. Cut into large triangles and serve with spreadable butter. ENJOY
 
Jiffy Cornmeal Muffin mix. Usually about a dollar or less a box. Add the one egg, a little water or oil (not sure which), bake and enjoy.
