I'm more of a lurker than a poster, but I couldn't pass this thread up! This is my all time favorite banana bread recipe. It's from "Cooking with Mickey"- It's the original recipe from the Monorail Cafe at the Disneyland Hotel. Makes 2 very dark moist loaves. ( a hint on the bananas - freeze them first. When you're ready to bake bread thaw them, cut off the ends and squeeze out the banana. They are already mashed, have no strings and a much more intense flavor)![]()
Hey Kitty, looks like this weekend should be a good weekend for some baking! Here is the receipe I use for banana nut bread/muffins/mini loaves.
1/2 c butter (1 stick) softened room temp
1 c sugar(I do use splenda and half it)
1/2 tsp salt
2 eggs
1 tsp vanilla extract
1 1/2 c all purpose flour( I do sift mine)
1 tsp baking soda
1 tsp baking powder
1/4 c chopped walnuts
3 ripe bananas
Preheat oven to 350 degree. Grease your loaf/muffin/mini loaf pan. In your mixing bowl combine butter and sugar mixing well. Add the salt, eggs, vanilla, flour, baking soda, baking powder, and bananas mixing well. Pour batter into loaf pan and bake for 50 minutes.
I don't mix my batter that way. I mix my butter and sugar first and then add in my mashed bananas. Next I add in my eggs and vanilla and then I add in my dry things. Lastly I mix in the walnuts. I don't use a mixer just a fork to mash the banana to the butter/sugar mixture. I use a rubber spatuala(think mixing thing you'd use to frost a cake) and stir from the bottom of the bowl to the top.

I have a big binder full of my favorite recipes and I cannot find it anywhere. So, this thread is very timely for me because I wanted to make banana bread this weekend and perhaps I will find a replacement recipe for the one I was using.
