I'm looking for a cookie recipe. Does anyone have an oatmeal, chocolate chip, walnut cookie recipe they would care to share?

Thanks in advance.

I have one! I just made them yesterday. They freeze very well after they are baked. I've made these so many times, I memorized the recipe. The coconut is optional. I've also used either pecans or walnuts.

Cowboy Cookies

3/4 cup room temp butter
3/4 cup packed brown sugar
3/4 cup granulated sugar
2 eggs
1 1/2 teaspoons vanilla
1 teaspoon cinamon
1/4 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups all purpose flour
1 1/2 cups quick oats
1 1/2 cups chocolate chips
1 cup chopped walnuts or pecans
1 cup flaked coconut (optional)

Beat butter on medium speed for 30 seconds. Cream together butter and sugars until fluffy. Add baking soda, baking powder, salt and cinnamon.
Add eggs and vanilla until well incorporated. Slowly add in flour, then oatmeal, scraping down the bowl when necessary. Add choc chips and nuts and coconut until just mixed.

Drop by rounded tablespoonful on a cookie sheet and bake for 10-13 minutes depending on size. (I tend to make mine a little big and get 48 cookies and they take 13 minutes in my oven.) Just look to see the outside edges get a little brown and a teeny bit golden on top. They will still be chewy in the middle, even if you freeze them.

I find recipezaar has very good recipes for cookies :goodvibes Did you want a recipe including all three ingredients? I have one which could include them, but I don't want to post it here as its my recipe for the cookie exchange and so its a surprise;) PM me if you want the recipe, but promise not to tell:rolleyes:

wdw dine junkie: That recipe looks great. Are they crispy or chewy oatmeal cookies?

I have also been looking for a good recipe, but it has to be a chewy one. A store near us has these awesome oatmeal cookies, but they use dried cranberries instead of raisins, white chocolate instead of chocolate chips, and pecans. OMG they may be the best cookies I have ever had! ;)

They are chewy in the middle with a bit of crisp on the edges where they get a little golden brown. You can bend them, even after being frozen and defrosted. I don't see why you couldn't use white choc chips and craisins in place of the other chips, sounds great to me!

Also, I have a picky eater at work and requested plain oatmeal, no chips, no coconut, no raisins. I used this recipe and added more oatmeal and used apple pie spice instead of the cinnamon. They loved them. It's a very forgiving recipe to substitute ingredients. I am going to try them with dark brown sugar next time and see how that changes the taste and texture.
