Looking to do something we've never done before, in all our trips....any suggestions would be appreciated.

We have done:

Cirque du soliel
Hoop Dee Doo
Illuminations Cruise
DisneyQuest
DD
Ohana's during fireworks
Keys to the Kingdom Tour
 
I'd suggest the Segway tour. It's great!!! :goodvibes
 
If moneys no object Cirque is my choice and keys second. :thumbsup2
 
If you are going with kids, Mickey's Backyard BBQ at Fort Wilderness was awesome. The food was great (buffet style) and all the characters made the night so much fun for the kids.

Also at Fort Wilderness campground is a character campfire. They do sing-a-longs with the kids and they play a Disney movie on a projection screen.

And #3 for Fort Wilderness...you can take a horse-drawn carriage ride. They leave from outside Pioneer hall and last for 30 minutes.

Have you had a Kitchen Sink? If not, it's a real experience, especially when they serve it to you, big announcement, flashing lights.
 
I too thought of carriage ride -- over at POR.

How about the Behind the Scenes Tour at the Land in EPCOT? I have heard from people who have done it, that it is very interesting.

2nd - You could do a character breakfast that you haven't been to before. Our favorites are the one's at Chef Mickey's and the Crystal Palace. If you want to do a lunch, then go back over to the Land and do the revolving restaurant. (I can't remember the name of it. Sorry!)

3rd - Just for fun, you can go to the Disney Putt-Putt courses. They are very challenging and fun. We all enjoyed it when we went here.

Last, go to one of the spa's on property and pamper yourself. If money really isn't an issue, let yourself relax and enjoy some of the finer things in life.

I believe the Kitchen Sink is a scrumptuous dessert from Beaches and Cream. There are photos of it somewhere on the sticky thread called "Photos of Disney Food" over at the Restaurants board. It look AMAAAAAZING!! *Drool*

A *Kitchen Sink* is a humongous ice cream sundae creation served in a *kitchen sink*. I saw it on the Travel Channel. I don't think my whole family could even make a dent in one of those things. But it sure would be fun trying. Look for the pictures, it is really cool looking.
 
Have you ever rented the mini speedboats @ the Contemporary? It's not very expensive and it can be so fun and refreshing on a hot day. It was one of the highlights for our kids during a recent visit.
 
We're going to the California Grill in the Contemporary for dinner and then watching Wishes from there. My parents said it was really nice! We also make sure we attend atleast one character meal during our trip. Our favorite are Chef Mickey's and Crystal Palace.

Another thing we're trying for the 1st time-- my mom and I are getting massages in the GF Spa while Dad and DH play golf!
 
I really enjoyed the "Wild by Design" tour, which was a surprise to me, not being much of an AK fan.

I liked the Segue tour, but not the "Hidden Treasures of the World Showcase" one.

You haven't had breakfast until you've had it at the Crystal Palace!

Another thing I enjoy is JellyRolls on the Boardwalk, but I am a big show-tunes dork as well as a big Disney dork, so it figures that I'd like it.

Poly Luau has gotten better, but still isn't (IMHO) as good as Hoop-Dee-Doo.

Can I even suggest heading over to Universal (and Margaritaville) without being called a heretic?
