I went on to their website this morning to buy tickets. I'm taking the grandkids next month! The last dropdown box date is Feb.8. We are going Feb.17. Does this mean they have sold out of tickets for the week of the 17 onward?

I just logged in to my account and all dates are available. Are you sure you're checking the "club" site?

you have to search activites with different dates or it will just show you dates for a month

Yes. That code is current. Otherwise it would cost $49.00. The rates on that site are very good in my opinion.
