Little (or big) things we shouldn't miss or forget to do

If you're a Cars fan we like to watch the lights come on at dusk in Radiator Springs. We also like to grab a bag of beignets to share at Brennan's for an on-the-go breakfast.
 
The last day in the parks, we stop by the candy store in both parks to get treats for our drive home. If we make it into DTD the last day, we will hit Marcelines too. We get caramel apples, salt water taffy, marshmallow wands, etc. Nice to have once we get home too.
Oh, and one afternoon, we will go to the movies (AMC Theaters in DTD). The prices are decent. We have lunch/early dinner in DTD, then take the monorail into Disneyland for the afternoon. I usually get an AMC gift card from Target using my red card to save 5%.

Checkout the newly-opened Big Thunder Trail. It's easy to forget this one but I really like it. It's well done and the newest part of DL. A reasonable walk-through probably won't take more than 15 mins or so.
 

the kitchen of the seven dwarfs, ride the mine car three times in a row and look at that kitchen, best 4 seconds and 10 feet themed in the entire park. They siad "Look Walt, if you do every attraction like that of the kitchen, it will take more than a year to open.
 
We are not normally donuts or deep fried pastry people, but when we were at DL, we just couldn't seem to get enough of the churros. I don't know what it was about them, but we had probably 4 or 5 of them during our 5 night stay.

Earl of Sandwich is also a must for us at DTD.

We always:
Character meals Minnie & Friends for breakfast, Storytellers for breakfast, & Goofy's for dinner. All, at least once.
See Turtle Talk or Crush in CA at least two to three times, it is different every time you see it due to the kids.
See Frozen at least twice, from a different seating area each time.
Ride the train completely around the park several times.
Ride the Monorail completely around the park several times.
See the Main Street Parade at least twice.
Go to the Gift Shops in the DisneyLand Hotel and the Grand Californian at least once each as they will usually have an item or two available only to those stores.
Watch the Fireworks from in front of the Castle at least once and from the Mainstreet Flag Pole or Mainstreet Train Station(requires reservations) as well.
Need to take a short break? In DisneyLand; get a soda and ride the train. In DCA, ride the Streetcar.
If you have any questions about any thing, go to City Hall, near the Mainstreet Train Station, and ask them.
Take lots of pictures and make use of the PhotoPass Photographers scattered through out the parks.

So many great things above! I wanted to add that I love sitting in the rocking chairs on Main Street and people watching-I relax and appreciate how lucky I am to be there :).
